Our vegan classic smooth cheese blocks are where we started. We used to make them one block at a time for fresh orders each week. It seems pretty crazy to think about doing that now! These cheeses have a nice smooth texture. They can also be sliced, shredded (except for brie), and melted. When melted they are nice and gooey and even have a bit of stretch! Because of the nice smooth texture, these cheeses are great on a cheese board with crackers and on cold sandwiches. They are also super tasty melted in grilled sandwiches and on pizzas. Just make sure they have enough moisture to melt well. If you are topping a casserole with these cheeses, it works best to cover the casserole with foil or a silicone top to keep in the moisture for a perfect melt.
